Aside from being wonderful people to eat lunch with, Lisa and John are the owners of a vegetarian bed and breakfast just South of Monroe, Wisconsin called <a href="http://www.innserendipity.com/" target="new">Inn Serendipity</a>. They also seem to have made writing about food, sustainability, ecology, and travel something of a family cottage industry.         <![CDATA[<p align="left" valign="top">Oddly, I'm writing this at a local Starbuck's Coffee. While Linda and I will occasionally pop into one when traveling and no other option presents itself, we have never been regular Starbuck's customers. In Green Bay, Kavarna came first. Today I'm here because it's a little more comfortable than my car dealership's waiting room and it happens to be several hundred feet down the road.</p>
						<p align="left" valign="top">Starbuck's has recently generated a lot of publicity for itself by attempting to regain the quality and sense of place that it once had (though if there was ever a 'Golden Age' of Starbuck's, I think I missed it). First, there was founder Howard Schultz's memo about how Starbuck's has lost its way, and then the three hour nationwide closure for retraining. It definitely seems like these are part of a marketing strategy to try to convince people that they are more than just the McDonald's of coffee. If anyone at Starbuck's upper management happens to be subscribed to this eNewsetter, I've compiled a list of what I believe that Starbuck's can learn from Kavarna:</p>
						<ul>
							<li> <i>Use Lighter Roasts.</i> The cup of coffee that I am drinking right now isn't terrible. But, what I am tasting are mostly the artifacts of roasting, and not the coffee itself. It's overdone, some might call it slightly burnt tasting. Starbucks' strategy appears to be to use overly-dark roasts to produce a strong flavor that covers up deficiencies in its coffee.</li>
							<li> <i>Use Ceramic Mugs.</i> Sure, it's a pain to wash dishes, but it's just not possible to curl up with a cardboard cup the way you can with a nice, thick diner mug.</li>
							<li> <i>Use Loose Leaf Teas.</i> The best quality tea is reserved to be sold loose leaf. Tea bags are generally filled with lower quality teas.</li>
							<li> <i>Free Wi-Fi.</i> I can't believe they continue to charge for this, wi-fi should be like air.</li>
							<li> <i>Give Your Store Managers More Autonomy.</i> Starbuck's is full of little touches that seem homey until you see that the location across town has the same little touches. If you gave your managers more autonomy, you could actually, you know, have homey little touches that were meaningful.</li>
						</ul>
						<p align="left" valign="top">I could continue, but it's this last point that's most striking to me. Starbuck's is full of marketing materials that are designed to look like corkboards, fliers, and other trappings of actual, community-based coffeehouses. It's a shame that they do not have sufficient trust in their 'partners' to do more than simulate community.</p>
						<p align="left" valign="top">Being in the coffee industry, it's hard not to think about Starbuck's frequently. But happily, they're not really in the same business that we are.</p>

Alterra and Intelligentsia coffees both have exceptionally high standards. Sadly, much of the coffee grown in the world is grown under exploitative conditions. One movie that illustrates these issues is <a href="http://blackgoldmovie.com" target="new">Black Gold</a>, and we're very pleased that Kristin Lytie has arranged for a free screening of it on Sunday, February 10th at 11:30 AM at the De Pere Cinema on George St. in East De Pere. The film is about the Oromia Coffee Collective in Ethiopia and their struggle to get a fair price on the global market. We have been able to get five pounds of coffee from the Oromia Collective, and we will be featuring this in the restaurant for the rest of the week, and also at the screening.</p>]]>

<p>While we will be sad to move away from the Broadway community of businesses, we will have some new neighbors. The one that we're most excited about is the New Children's Museum of Green Bay. Having taken Johanna to both the Betty Brinn Children's Museum in Milwaukee and the Children's Museum in Appleton, we have some idea what to expect. Modern children's museums are paradises of educational and social fun. This institution will be an amazing addition to family life in Green Bay. However, they are still carrying out their fundraising campaign. So far, they have raised $1.9 million, but they still have 1.6 million to go. That's a lot of money to raise, especially since they will be breaking ground in March! They are also looking for volunteers. So, if you have time and/or money and you'd like to help a passionate group of people achieve a very worthy goal that will improve childhood in Green Bay, check out their <a href="http://develop.gbchildrensmuseum.org/" target="new">website</a> for more information.</p>]]>

        <![CDATA[<p>Just so you know, we haven't been blind to the new trend: sipping chocolate. We're as intrigued by the idea as anyone, we want it bad (bad enough to use bad grammar!) Here's the trouble, how? We've experimented with several of the commercial drinking chocolate product solutions that are advertised all over the coffee trade mags and we haven't been impressed. At best they were underwhelming, and at worst they tasted like chemicals. </p>

<p>This week we figured it out... we stepped back, stopped looking at the products and started looking at the raw materials, and it looks like we'll be making our own sipping chocolate in house. It will take us a little time to figure out the best recipe, the best methodology, the best way to serve it, etc. We'll launch it on February 14th!</p>]]>

<p>For about six months, we have been attempting to keep a secret about Kavarna's future. Today, after months of furtive meetings and hushed conversations, it is finally time to lay the rumors to rest and to announce our intention to move Kavarna into the River Center.</p>

<p>Since its inception, we have been excited and curious about the redevelopment of Green Bay's river front. It represents an important and necessary shift in our city's relationship to the Fox. For 150 years, the river was used primarily as an industrial resource; its banks were lined with factories, warehouses, fish canneries, and mills. With some notable exceptions, the Fox River has been de-industrialized. Finally we are able to put it at the very center of Green Bay's public life, which is where we would like Kavarna to be. This past Summer, we initiated an ongoing conversation with the developers, and together we have found an incredible new home for Kavarna in the River Center.</p>

<p>Picture a larger Kavarna with floor-to-ceiling windows overlooking the Fox River; directly on the boardwalk. Take your Lemon Ginger Green Iced Tea to go and listen to the music in the amphitheater on a warm Summer night. Or, take some chilled Pinot out to our café terrace and have a conversation with your friend as the sun sets over the Neville Museum. Or, book a private party on Kavarna's second story mezzanine! Kavarna will be able to be even more things to more people in a larger and more flexible space that we can call our own.</p>

<p>And don't worry, we promise we'll only change for the better! We're very serious about trying to pin down what makes Kavarna Kavarna, so that we can move that across the river too. We won't be moving until 2009, so there's plenty of time to make sure we do things right!<br />
